40 UB-SIHTM Students Volunteer in the Making of the Unique “Paella a la Cordillera”

Forty (40) University of Baguio – School of International Hospitality and Tourism Management (SIHTM) students united with renowned chefs in the Philippines in preparing the unique Paella a la Cordillera, a highlight of the culminating activity of the Farmers’ and Fisherfolk’s Month celebration organized by the Department of Agriculture-Cordillera Administrative Region (DA-CAR) held on May 30, 2024, at Melvin Jones. With the theme “Preserving Heritage, Capturing Values”, the event highlighted the region’s agricultural heritage, emphasizing the farmers’ dedication and resilience.

Joining the team of chefs spearheaded by Chef Waya Araos-Wijangco of Gypsy Baguio, the UB-SIHTM students helped in the mise en place of the paella ingredients on May 29 and up to the big day, the showcase of the uniquely made dish that features local ingredients on May 30. The event pays tribute to the farmers and fisherfolks in the Cordillera Administrative Region as the ingredients prepared are locally sourced, such as Chong-ak rice – heirloom rice from Kalinga, pinunnog- Ifugao’s smoked blood sausage, kiniing – smoked meat, longganisa, native chicken meat, and highland farm vegetables like bell pepper, broccoli, cauliflower, and carrots, among others.

During the event, the UB-SIHTM students also helped set up the giant paellera and prepared the ingredients at the venue. After about a thousand spectators enjoyed the paella, the students also helped in the egress activities, including washing the pots used. 

The 2-day experience instilled in the students the Cordilleran value of “binnadang” emphasizing selfless community service. It also nurtured the spirit of volunteerism as students participated in preparing a dish for the community, supporting local farmers. Additionally, they had the opportunity to network with the participating chefs, who were primarily restaurant owners and executive chefs.
